The Backwards Supper (with Mac & Cheese)
Hot summer days and ice cream treats just seem to go together. As a young mother, working full time, there were those days when work was stressful and after picking up my children from the babysitter’s home, I realized that I had no idea what I was making for dinner. One such day, I realized that I just needed to “take a breather.” That was the day that the “Backwards Supper” came about. So, I told my two kids that we going to have our dessert before dinner, and I called it The Backwards Supper. We picked up some ice cream on the way home, had ourselves a little break, laughed about it, and arrived at our house with smiles on our faces. Then, as the kids relaxed and played, I put together a quick and easy meal. It was not long before they began requesting Backwards Suppers, and we giggled about it every time.
Quick & Easy Macaroni and Cheese with Broccoli
Macaroni and Cheese, Italian Five Cheese, 12 oz package
Chunk White Chicken Breast, 12.5 oz can, or 1 cup pre-cooked
Frozen Broccoli, steamed and cut into pieces (I like the Tuscan Seasoned option)
½ cup diced sweet pepper (red, orange, or yellow)
1 tsp Mrs. Dash Table Blend
While boiling the macaroni, prepare the broccoli, chicken and sweet peppers. Put the macaroni and cheese together according to package directions, then stir in the other ingredients. Sprinkle with Parmesan Cheese, or Salt and Pepper, to taste.
Suggestion: After dinner, create “Ice Cream Cones” with play dough or create Pasta necklaces with dried macaroni, wheels, and rigatoni strung together on colorful yarn.
