Jennie's Garden - Meatballs in a Truck
When my kids were pre-school age, sometimes it was a challenge to get them to slow down enough to eat their meals. One technique that I used was the “Food-Truck.” I found easy-to-wash plastic toy trucks that I could serve food in. I used those special toys just for mealtimes, then washed and put them away after each use. These meatballs would have been perfect, served with fresh veggies and cheese in the bed of those trucks.
Stir together 1 egg, ½ c almond flour,1 tsp Mrs. Dash Table Blend, 1 tsp Pink Himalayan salt, 1/2 tsp black pepper. Add ¼ cup each of minced sweet yellow pepper and celery, 1/3 cup of minced onion, 1 Tablespoon each of chopped fresh Sage, Rosemary and Parsley, then stir to mix. Add 1 lb. ground sausage and blend it all together. Form into walnut size meatballs and brown in Olive oil on medium heat, about 7-8 minutes on each side until cooked through. Drain on paper towels.
To serve, put a layer of lettuce leaves or parchment paper in the toy truck bed. Arrange meatballs, cucumber sticks, baby carrots, or cheese for each child in their “Food-Truck.”
IDEA... Sit together and read stories to the children while they eat.
(Ground beef, Turkey, or Chicken could be used instead of sausage)
